Banana Nutella Muffins

Still trapped inside, still baking up a storm. J ended up buying 4 bunches of bananas last time we were at the store – they all turned ripe at once so thus it’s banana bread time. 

Sadly when I went to make this, I was out of chocolate chips (I may or may not have eaten all of them….). But how do you make banana bread even better? Well… obviously you mix in Nutella! It’s a great substitute :).

Banana Nutella Muffins

Serves: 12 Cooking Time: 18-20 min

Ingredients

  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • pinch of salt
  • 5-6 large bananas (you should get 2 1/4 cups mashed)
  • 1/2 cup sugar (granulated or golden yellow)
  • 1/2 cup melted butter or margarine or oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup Nutella (melted in microwave for ~30 seconds)

Instructions

Preheat the oven to 400 degrees F. Grease a 12-cup muffin tray with butter or line with paper liners.

In a large mixing bowl, combine the flours, baking powder, baking soda, and salt.

In another bowl, mix together the mashed banana, sugar, butter, eggs, and vanilla.

Add the wet ingredients to the dry, and mix until just combined.

Scoop the batter evenly into the muffin tray (I make sure the batter comes right to the top so you get larger muffin tops!). Swirl about 1 teaspoon of Nutella into each muffin.

Bake for 15-20 minutes or until a tester inserted into the center comes out clean.

Allow to cool for 10 minutes before removing from pan and cooling completely on a wire rack.
