My Favourite Banana Bread

Public service announcement. Use 6 bananas when you make your banana bread. It may seem like a lot, but like.. trust. 

Everyone has a recipe for banana bread. And I’m sure everyone thinks theres is the best. I’m not saying this is the best ever- because I have not tried every recipe (it’s a work in progress)- but I can tell you that this recipe is awesome. 

One of my co-workers has been bringing this banana bread in for work events and birthdays and potlucks for ages. And every time, it’s demolished almost instantly. Usually I try to swipe an extra piece, because hey it’s just that good. 

I FINALLY managed to get her to send me her recipe, and to my delight, it was just as delicious when I made it at home. The surprising fact is, that there is no added liquid other than the eggs, butter, and bananas. There’s just a LOT of bananas. Like 6. 

So DISCLAIMER: I have modified this recipe a bit for this post, so it is not quite the original – but I will include the original in case you want to try that one in all it’s glory (see the notes section). My version has a bit more fibre (from added flax seeds), and a bit less sugar and butter but ALL of the flavour.

I didn’t add chocolate chips or nuts but add some in if that’s your preference!  🙂

Favourite Banana Bread

Serves: 12 Cooking Time: 40 to 50 min

Ingredients

  • Dry Ingredients:
  • 3/4 cup whole wheat flour
  • 1 cup all purpose flour
  • 1/4 cup ground flax seed
  • 1 - 2 teaspoons cinnamon
  • pinch of ground nutmeg
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

  • Wet Ingredients:
  • 2 1/3 cup mashed bananas (about 6)
  • 1/2 cup light brown sugar
  • 1/3 cup melted butter
  • 2 large eggs
  • 2 teaspoons vanilla extract

Instructions

Preheat the oven to 350 degrees F. Grease a 9x4 inch loaf pan with butter.

In a large mixing bowl, combine the flour, flax, cinnamon, nutmeg, baking powder, baking soda, and salt.

In another bowl, mix together the mashed banana, sugar, butter, eggs, and vanilla.

Add the wet ingredients to the dry, and mix until just combined.

Pour the batter into the loaf pan and bake for 40 to 50 minutes or until a tester inserted into the center comes out clean.

Allow to cool for 10 minutes before removing from pan and cooling completely on a wire rack.

Notes

Original Recipe (No Modifications):
2 cups all purpose flour
1/4 teaspoon salt
1 tablespoon baking soda
2 1/3 cup mashed bananas (about 6)
3/4 cup brown sugar
1/2 cup melted butter
2 large eggs
2 teaspoons vanilla extract
