Sometimes I make cookies. And when I do, they are usually biscotti. Except on occasion, when I decide it’s time for something different, I tend to not be able to come to a conclusion about what I want to put in them. So then I want to put EVERYTHING in them. That’s how these beauties were made. Because who wants to settle for boring old chocolate chip, when you can have chocolate chip-coconut-almond-date-pretzel cookies? 


While I tend to post a lot of “healthified” recipes, there are times that you need to indulge. If you worry too much about the foods you eat and don’t take a step back to just enjoy it then you’re missing out! 

So try these out next time you want to make chocolate chip cookies. They are delicious…sweet… and salty. That’s the ticket. Just don’t eat all of them in one sitting. 

Everything Cookies

Serves: 12-14 Cooking Time: 10-12 min


  • 1/2 cup softened butter
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla

  • 1 cup flour
  • 1/4 tsp baking soda
  • 1/8 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt

  • 3/4 cup rolled oats
  • 1/4 cup coconut
  • 1/4 cup chocolate chips
  • 1/4 cup pretzels
  • 1/4 cup roasted almonds
  • 1/4 cup chopped dates
  • 3 tbsp Skor bits

  • whole pretzels for topping (optional)



Preheat oven to 350 degrees F. Line a baking tray with parchment or a silicone baking sheet.


Cream together the butter and sugar until smooth. Add the egg and vanilla and mix until well combined, scraping down the sides as needed.


In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. Add gradually to the butter mixture on low speed. Once incorporated, add the oats, coconut, chocolate chips, pretzels, almonds, dates, and Skor.


Use a heaped tablespoon to measure the dough. Drop onto baking sheet and use your fingers to press the cookies down and flatten as they will not spread as they cook. (you can also use the bottom of a glass but your fingers give a more textural look!). Press a pretzel onto the top.


Bake for ~10-12 minutes or until lightly golden. Cookies should be removed from the oven before not completely finished cooking as they will continue cooking as they cool.
