Breakfast vibes. Because morning is a time where I want to eat my favourite foods. And pretend I don’t have to go to work.
If you make granola ahead of time you have an excellent mega-fast or on-the-go breakfast, I mean- I’m sure you’ve got some mason jars in your house. People love mason jars. Put everything in mason jars. Like your granola, as you are rushing out the door because you slept in and are now late for work.
But seriously- this granola is fab. I added buckwheat groats because I was walking through my nearby bulk store and they were kinda staring at me and willing me to take them home and make them into something delicious…
I have a 6th sense. I hear food speak. Much better than seeing dead people. I digress…
You can totally put buckwheat groats in anything though! I have a feeling you’ll be seeing them a lot more on the blog. I tend to go through phases. Try em out in this granola first.
Preheat the oven to 300 degrees F. Mix together the oats, buckwheat, cashews, cinnamon, and salt in a small bowl. In a larger bowl, stir together the honey, egg whites, oil, vanilla, and lemon zest. Add the dry ingredients to the wet and stir until well coated. Empty ingredients onto a baking sheet. Bake for 30-40 minutes, stirring every 10 minutes or so until golden. Add the dried apple once granola is removed from the oven so that they remain soft (and don't turn into little rocks). Store granola once cooled in an airtight container. Serve with yogurt, or milk for a hearty and flavourful breakfast.Apple, Cashew, & Buckwheat Granola
