Grilled Zucchini Spirals with Peach, Basil, & Goat Cheese

It’s that time of year again- everyone is being bombarded by zucchinis left right and center.

I hate to say it, but I am tiring of zucchini. My supply never seems to shrink and I’ve been grating it and putting it in everything from omelettes and frittatas, to muffins, fritters, eating them in the form of zucchini pasta… and even in my muesli/oatmeal… literally any place that it can be hidden and used up.

The other day I came up with 2 other zucchini recipes, which I will definitely be adding to my annual “Let’s use Zucchini in Everything” rotation. The first- grilled zucchini and peach spirals.

I loved the fresh hit from the basil mixed with the goat cheese and peaches. The balsamic reduction adds a bit of acidity and they are a lovely fresh appetizer. I did half of them with prosciutto and half of them vegetarian (just omitted the prosciutto from the roll). They were delicious both ways. Enjoy!

Grilled Zucchini Spirals with Peach, Basil, & Goat Cheese

Ingredients

  • 1 medium sized zucchini - sliced thinly on a mandolin
  • 1 ripe peach
  • 2 tbsp goat cheese
  • 3 tbsp cottage cheese (optional- if you don't use this use some more goat cheese)
  • 4 strips prosciutto (trimmed of the fat layer and cut in thin strips)-- leave out for a vegetarian appetizer
  • fresh basil leaves
  • Balsamic reduction (you can buy this at the store but there is a quick recipe below in the notes)

Instructions

Use a grill pan, bbq or sauté pan to cook the zucchini - about 1-2 minutes per side. (the grill pan will give the nice grill marks but it isn’t necessary).

Slice the peach in thin slices (you can also grill these!).

Combine the goat cheese and cottage cheese in a small bowl and combine well.

Spread a small amount on the zucchini strips. Add a strip of prosciutto and a peach and roll into a spiral. Stick a toothpick through a basil leaf, through the zucchini and serve with a balsamic reduction or plain.

Notes

Optional Sauce- Balsamic Reduction: Yo 1/4 cup balsamic vinegar 2 tbsp granulated sugar -- Boil together on stove for 4 minutes- Don't let sit too long or it will get too thick!
