Healthy(er) Faux Fudge- Blackbean and Date

Elemental Custard

Merry Christmas to all!

While you are eating tons of holiday goodies and chocolate... consider making some healthy(er) fudge.

Deceptively fantastic. Dates... blackbeans... coconut oil... probably the healthiest thing that ever happened to chocolate.. except if you added kale to it of course- but don't worry- I didn't do that. This time.

This fudge was our holiday treat- it definitely satisfies that chocolate craving without being too heavy. Try it out.

Recipe: Faux Fudge

Serves 6-8

one can of black beans - drained and rinsed (15 oz can)
3/4 cup unsweetened cocoa powder
6 tbsp melted coconut oil
~12 medjool dates
2 tsp vanilla extract
1/2 tsp cinnamon (optional)
pinch of salt (1/8-1/4 tsp)
1/4 tsp espresso powder

Optional Add-Ins:
1/3 cup unsweetened coconut flakes
1/3 cup crushed nuts (almonds, pistachios)

unsweetened cocoa powder


In a food processor, puree the dates until smooth (scrape down the sides as needed). Add the black beans, coconut oil and vanilla extract and puree. Add the cocoa, cinnamon, salt, and espresso powder. Continue to buzz in the food processor until smooth.

Line an 8x8 pyrex with waxed paper and empty contents in. Smooth to the sides to make it even and level. Refrigerate until set (~1-4 hours). Remove from fridge and dust with cocoa powder. Cut into squares ( I cut mine about 1" square). Store in the fridge- remove and let sit out for 30 min before serving. Enjoy!
