Elemental Custard

There's something about avocado dips that get me every time. I love them. With chips... on my burger... with vegetables... tacos... you could probably even slather it on your face as a rejuvenating mask. The possibilities are endless.

Lately I have been testing out a few recipes for Silk. I often use their soymilk for my smoothies and other breakfast fare, but I never really thought about including it in other cooking situations.

Who knew- soymilk in an avocado dip is great! This recipe turned out really creamy with a fantastic texture. I opted for a generous amount of lime juice and a bit of onion in the recipe because I like my dips to have some kick. Check it out!

I will definitely be turning to Silk for some of my other recipes. I am already picturing my next tart being an almond milk custard. Maybe with some peaches? MMMMM!

Recipe: Creamy Avocado Dip

Adapted from HERE

Makes ~2 cups

Ingredients:

1/4 cup (50ml) Silk Unsweetened (or Silk Original)
1 clove garlic finely minced
1 tablespoon (15ml) finely minced red chili or jalapeno
2 tablespoon (30ml) minced purple onion
1 tablespoon (15ml) lime juice
2-3 tablespoon (30-45ml) chopped fresh cilantro (leave a few sprigs for garnish)
2 ripe avocados
salt and pepper to taste

Method:

Using either a fork or a food processor, mash the avocado until smooth (The food processor will give you the creamiest dip!). Add the other ingredients and blend together well with a fork or wooden spoon.

Serve with fresh veggies or tortilla chips. This dip also works wonderfully as an accompaniment for tacos, burgers any other Mexican inspired dish!
