Graham and Rice Cereal Bars with Browned Butter

I used to love making Rice Krispie Squares with my mom growing up. Little did I know, she would always add extra cereal and fewer marshmallows than the recipe asked for to make it just a bit “healthier”.

Of course, this healthier version was still delightful. It’s cereal coated in marshmallow fluff- you can’t go wrong. And will I continue this with my own family one day? 100%. However, sometimes you want a bit more of a decadent version.

Instead of increasing the cereal and decreasing the marshmallow, I’ve done the opposite. These Golden Graham Cereal Bars have LESS cereal, and MORE marshmallows, which makes them gooey, and delicious, with hidden pockets of half-melted marshmallows throughout.  And really let’s be honest, you can’t go wrong with browned butter.

If you want to make them ultra decadent follow the recipe as written. If you are trying to “healthy” it up slightly- don’t add the extra 1 to 2 cups of marshmallows. But be warned – you will miss those puddles of gooeyness.

It’s my food philosophy that all foods can fit into a healthy diet. Foods are not inherently good or bad. They are just food. Eating is just as much about enjoyment and sharing, as it is fuel for our bodies. The challenge I think we are all faced with is learning how to instill that moderation into our own diets, which is definitely easier said than done!

S'mores Squares: Browned Butter and Graham Cereal Treats

Serves: 16 Cooking Time: 10 minutes

Ingredients

  • 1/4 cup butter
  • 1, 250g bag marshmallows + 1 to 2 cups extra mini marshmallows (optional but recommended)
  • 1 teaspoon vanilla extract
  • 3 cups Rice Krispies cereal or rice cereal
  • 2 cups Golden Graham cereal

Instructions

Grease a 9x13 or 8x10 inch baking dish with butter. Set aside.

In a large, heavy-bottomed pot, melt the butter over medium heat until it starts to brown, stirring occasionally. It should have specs of brown throughout, but should not be browned all the way as it will continue cooking when the marshmallows are added.

Lower heat to medium-low. Add the 250g bag of marshmallows. Cook, stirring often until the marshmallows are mostly melted. Remove from heat and stir in vanilla extract.

Stir in the cereal, and extra 1 to 2 cups of mini marshmallows as well as the cereal until everything is coated.

Using a greased spatula, empty the mixture into the prepared baking dish and spread it into the corners, using greased hands if needed to flatten evenly into the dish.

Set aside for 30 minutes to set.

Cut into 12-24 equal squares and enjoy!

Notes

the 8x10 inch baking dish will result in thicker squares. I used this size when making mine for this recipe.

Cut squares into 12 to 24 pieces depending on the size you prefer. I made smaller squares and opted for 24.
