Sourdough Discard Crackers

I’ve entered the weird and wonderful world of sourdough and I am not going back. It has been such a saving grace since I have not been able to find yeast for the life of me!

I love the idea of sourdough. I do not love the idea of all of the waste that comes from discarding the mother when you feed it every week. But these crackers – they are the answer. Instead of discarding all of the discard each week, I have been making batches and batches of these crackers. They are thin, crispy, flavourful, and SO addicting. 

The first time we made them we finished the entire batch in one sitting. You have got to give them a try!

Sourdough Discard Crackers

Serves: 1 sheet pan

Ingredients

  • 1 cup of sourdough discard (either from the fridge, or fed)
  • 2 tablespoons melted butter or oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried herbs or any seasonings you like!

Instructions

Preheat the oven to 325 degrees F and line a baking sheet with parchment paper.

In a bowl, combine all of the ingredients and mix well to combine.

Pour dough into the prepared baking sheet and using an offset spatula or other utensil, spread the batter thinly over the prepared baking sheet in a large rectangle. Sprinkle with additional herbs and more salt if desired.

Bake for 10 minutes. Remove from oven and score crackers with a knife to make desired shapes. Place back in the oven for about 30-40 minutes or until crackers are golden.

Let cool on wire rack and try not to eat them all!
