S’mores Cookies

It’s summer. Summer means fires and camping and marshmallows. It also means s’mores. 

When you’re living in the city, a campfire is hard to come by. So let’s just turn those suckers into cookies and call it a day. 

Regular chocolate chip cookies are made infinitely better with the addition of marshmallows and graham crackers. They make the cookies taste SO much better. I don’t think I would ever eat plain chocolate chip again if I had these in my life. 

Also – let’s just imagine these as ice cream sandwiches.  Mind blown. Excuse me while I go make some ice cream.

S'mores Cookies

Serves: 18 Cooking Time: 8-10 min

Ingredients

  • 1/2 cup softened butter
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/4 cups all-purpose flour
  • 3/4 cup honey graham cracker crumbs
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/3 cup dark chocolate chips or chunks
  • 1/3 cup white chocolate chips or chunks
  • 1/3 cup mini marshmallows (I cut these in half)

Instructions

Preheat the oven to 375 degrees F. Line a baking tray with parchment or a silicone baking mat.

In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugars (Alternatively you can use a spatula and mix together the sugar and butter until combined).

Add the egg and vanilla extract and mix until combined.

In a medium bowl, mix together the flour, graham crumbs, salt, and baking soda. Add this to the wet ingredients and mix until combined.

Mix in the chocolate and marshmallows.

Scoop the dough onto the prepared baking sheet. Each cookie should be ~2 tbsp of dough. Position the cookies at least 1 inch apart as they will spread. Flatten each cookie slightly with your fingers.

Bake for 8-10 minutes or until golden. Remove from oven before they look completely done as they will firm up a bit when they are removed. If any of the marshmallows have spread, use a spoon and push the cookies back into round shapes. Allow to cool completely.
