Creamy Mango-Lime Soft Serve

Mango Lime softserve N'ice cream

Ice cream is my kryptonite. I am constantly trying to create a sinfully creamy dessert, that is a bit less rich and a bit more healthy than your standard ice cream. Probably so I can eat more of it and not feel guilty about finishing a whole tub.

Guys- if you haven’t tried to make banana soft-serve ice cream I don’t know how you have lasted this long. Honestly. It’s divine, healthy, and delicious.

While it isn’t the same as the real thing (nothing can ACTUALLY take the place of REAL ice cream) it is extremely refreshing for the summer and it requires way less time, ingredients and money than a true ice cream does.

You had me at no ice cream maker required. Jackpot.

All this recipe is, is frozen bananas. Blended with a few additions to make them a bit more interesting. My favourite version was the mango-lime, but I also tried chocolate hazelnut (which was quite tasty), and a raspberry one. But the pineapple-banana and mango-lime were the heavy hitters.

Start your food processors. Summer is about to get way more delicious.

Creamy Mango-Lime Soft-Serve

Serves: 2-4

Ingredients

  • 2 very ripe bananas (peeled and frozen until solid)
  • 1 cup frozen mango chunks (or 1 mango, chopped and frozen)
  • 1 tsp vanilla extract
  • zest of 1 lime
  • juice of 1 lime
  • * you can also add other flavours! - The above photo has a chocolate hazelnut version and a raspberry banana, but the mango is my favourite!
  • * Chocolate Spiced Hazelnut "Ice Cream":
  • 2 very ripe frozen bananas
  • 1/3 cup hazelnut butter (or 1/2 cup roasted hazelnuts processed in food processor until smooth)
  • 2 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • * Pineapple Banana "Ice Cream":
  • 2 very ripe frozen bananas (sliced)
  • 1.5 cups frozen pineapple
  • 1 tsp vanilla or coconut extract

Instructions

Place all ingredients in a food processor and process until smooth and creamy.

Notes

It may look like it's not going to work- but trust. It will. Scrape down the sides as needed and be patient - takes between 2-5 minutes depending on how frozen your bananas are! This does not freeze well so enjoy immediately! If you try and freeze it for later it gets very icy so you may have to re-process it.
